2012 Meal #4

Our fourth meal of 2012 was possibly our favorite so far! We loved it! Of course, I also found this recipe on Pinterest. We were able to get two dinners and one lunch out of it which is my kind of meal! It was a little more time consuming but not bad and completely worth it!

Chicken Enchilada Pasta
2-3 chicken breasts, cooked and shredded
2 tablespoons olive oil
2 garlic cloves, minced
1 med. onion diced
1 red pepper, diced
1-4 oz. can diced green chiles
1/2 teaspoon salt
2 teaspoons chili powder
1 teaspoon cumin
2- 10 oz cans green chili enchilada sauce
2/3 cup red enchilada sauce
2 cups shredded cheese (I used colby and monterey jack)
1 cup sour cream
penne pasta
Optional toppings...
avacado, green onions, black onions, tomatoes, sour cream
Cook the chicken and shred (I baked it with a little seasoning salt). Cook Pasta. Chop veggies. Heat olive oil in deep skillet and cook onions for about 3-5 minutes. Add garlic and red pepper and cook another 3-5 minutes. Add cooked chicken, green chiles, cumin, chili powder, salt, and enchilada sauces. Simmer 8-10 minutes. Add cheese and melt. Toss in sour cream but DO NOT BOIL!!! Cook on low heat or sour cream will curdle. Pour sauce over pasta and add toppings.

I better get moving on meal number 5...I am running out of days to squeeze it in the fifth week of the year.
