19 days folks

Yes, you read that correctly! 19 DAYS LEFT! In just 19 short days we will be meeting our sweet girl. I can't believe we are down to such a short amount of time, less than three weeks!
The other big news is...
I am still not on bedrest or medication!! I know, I am just as shocked as you are. Okay, maybe I'm a little dramatic but I really expected bedrest and meds by now for high blood pressure. I am so thankful I have made it this long and I really feel like I may just make it to the end without bedrest. Wow, that would be amazing!
And one little complaint to top it off...
I am so unbelievably sick of my right arm and hand falling asleep all day long and all night long! If I talk on the phone, write, or even lift my arm up for a few seconds it is completely numb. And no matter how I sleep at night, in bed or on the couch, my arm is asleep most of the night. I have to sit up for 5-10 minutes with my arm dangling down to get it to stop hurting so bad and then it is asleep again within a few minutes of laying down. I remember this a little with Carter but not nearly as bad! I am just assuming circulation issues are normal with pregnancy...
19 more days...and I am ready!!!

2012 Week #8


So far I haven't missed a week of my "trying a new meal a week" resolution but I sure am slow actually putting them on the blog. Last week's new meal was a shredded chicken tortilla type thing. They were very good and very easy.
Crockpot Chicken Tacos
1 envelope taco seasoning
6 pieces boneless chicken breasts
1 16 oz jar salsa
Dump everything into a crockpot and stir around a bit to coat all the chicken. Cook on high for 4 to 6 hours or low for 6 to 8 hours. When done the chicken should shred easily. Put in a tortilla with cheese, lettuce, tomato, and sour cream.
Jay liked adding some of the salsa sauce that cooked in the crockpot with the chicken. Super easy and it made a ton! We had these for the next two days :)
In an earlier post I posted a picture of the most amazing chocolate chip cookies ever but later realized that I forgot to actually put the recipe on here. So here is a great recipe for chocolate chip cookies that I found on pinterest...
3/4 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup sugar
1 egg
2 tsp. vanilla
2 cup flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 cup chocolate chips
Cream butter and sugars until light in color. Add egg and vanilla. Blend in. Mix in flour, cornstarch, baking soda, and salt. Stir in chocolate chips. Drop little spoonfuls onto baking sheet and bake for 8-10 minutes at 350 degrees. Do not bake longer than 10 minutes. We liked them the best when they looked a little underdone as we pulled them out of the oven.
These really were amazing and I guess the secret ingredient that makes them so fluffy and soft is the cornstarch. I know I have never made chocolate chip cookies with cornstarch before.

Party Pics

The night before his birthday Carter got to open a couple presents from out of town family. He was super excited because he saw Minnie Mouse as soon as he opened this gift.


We had a lunch birthday party after church on his actual birthday. I served sandwiches, chips, and fruit and had fish cupcakes for dessert. We had lots of family and friends over and appreciate everyone wanting to celebrate our little guy with us.

We used real fish to decorate the table. This was a fun surprise for Carter. I am sure you have figured out that our theme was fish.







He was not sure about this whole singing happy birthday thing.

And then he wouldn't blow the candles out.


And he also wouldn't eat any part of the cupcake...strange kid!
I tried taking a bite to see if he would follow my lead but no such luck!








He was all for opening presents though. He was blessed so much with some fun and great gifts!













Carter realizes that Kiera has one of his new presents which he quickly grabbed from her...(don't worry, I made him share with her after we all laughed)
But if you had noticed in the above picture Kiera had his Giants hat on...
He didn't notice it right away but we were all waiting for his reaction when he did notice...
Almost on cue, he looked up and had the funniest look on his face before attacking and grabbing it off her head...
Still trying to get it while the rest of us are laughing hysterically...


After I laughed for a second and he got his hat back I made him give her one of his new toys to play with.

These two are so funny! They act like siblings :)


We got Carter a fish take and fish for his birthday present. This is the big reveal...


He was very surprised and loved it! He could stand there at his dresser for hours watching the fish.











We had a fun day celebrating our Carter man!! Thanks to everyone who came and helped us celebrate his birthday!
