Madelynn's Maternity Shoot...32 Weeks Pregnant

My friend Hollie took our maternity pictures again. She also took them when we were pregnant with Carter. We love how they turned out! It wasn't super easy to get Carter in them but we got a few with him that we love.





























We were able to get him to actually be close enough to us to be in the picture by telling him to slide down the little ramp. He may not be looking at the camera smiling but at least he is in the picture!


He makes us laugh!


We told him to bring me a rock to show me...

Then he decided to try and eat the rock...
Hence the freaked out look on my face. Half a second later I had dropped all of the blocks and was desperatly grabbing for the rock before he actually ate it. We all got a good laugh out of that one though and decided not to encourage him to bring mama little rocks anymore.






I was still trying to convice Carter to be in a picture with me...

The I attempted the force him to be in a picture approach...didn't go so well!




We love you Mady girl!! And we can't wait to meet you...only six weeks from today!! You will be the most loved little lady in the whole world!

2012 Week 5

Mexican Chicken Casserole

1-10 oz. can cream of chicken soup
1-10 oz. can cheddar cheese soup
1-10 oz. can cream of mushroom soup
1-10 oz. can tomatoes
4 cups cooked chicken, chopped
flour tortillas ( I used the smaller size tortillas so they fit better in the pan)
2 cups shredded cheddar cheese

In a large bowl, stir all soups and tomatoes together. Stir in cooked chicken.
In a greased 13 by 9 inch pan, layer tortillas and chicken mixture beginning and ending with tortillas. Sprinkle with cheese. Bake 30 minutes at 350 degrees.

We liked this meal as well. My only dilemma with it was some bites I thought the tomato flavor was a little too strong. I might try only using half a can of tomatoes the next time.

I also tried a pinterest chocolate chip cookie recipe and LOVE them!! They were supposed to be the fluffiest and softest cookie recipe ever and I will be honest and say that I had my doubts. Well, I was wrong. They were so soft and fluffy and tasted great too! The secret ingredient that apparently helps with this is corn starch. Who knew? I highly recommend them!!!

2012 Meal #4

Our fourth meal of 2012 was possibly our favorite so far! We loved it! Of course, I also found this recipe on Pinterest. We were able to get two dinners and one lunch out of it which is my kind of meal! It was a little more time consuming but not bad and completely worth it!

Chicken Enchilada Pasta
2-3 chicken breasts, cooked and shredded
2 tablespoons olive oil
2 garlic cloves, minced
1 med. onion diced
1 red pepper, diced
1-4 oz. can diced green chiles
1/2 teaspoon salt
2 teaspoons chili powder
1 teaspoon cumin
2- 10 oz cans green chili enchilada sauce
2/3 cup red enchilada sauce
2 cups shredded cheese (I used colby and monterey jack)
1 cup sour cream
penne pasta
Optional toppings...
avacado, green onions, black onions, tomatoes, sour cream
Cook the chicken and shred (I baked it with a little seasoning salt). Cook Pasta. Chop veggies. Heat olive oil in deep skillet and cook onions for about 3-5 minutes. Add garlic and red pepper and cook another 3-5 minutes. Add cooked chicken, green chiles, cumin, chili powder, salt, and enchilada sauces. Simmer 8-10 minutes. Add cheese and melt. Toss in sour cream but DO NOT BOIL!!! Cook on low heat or sour cream will curdle. Pour sauce over pasta and add toppings.
